no bake, low calorie, black forest cheesecake.
I thought i'd make an easy no-bake cheesecake, but a little bit healthier. (since i pretty much always try to eat healthy, and stick to a strict low calorie diet daily.) since cheesecake isn't really in my calorie allowance for the day. I found a can of lite cherry pie filling at my local grocery store, which surprisingly only had 35 calories per serving (1/3 cup) which, for canned pie filling, isn't bad at all. I also stumbled upon a chocolate graham cracker pre-made crust while there (okay, so this ingredient is not not calorie, but i'm a sucker for pre-made crusts. i'll admit, i'm a lazy baker.) and thought to myself, i could make a black forest, no bake, lite cheesecake!I didn't do a step-by-step picture taking of this recipe, as it is no bake and extremely easy to make.
INGREDIENTS:
- 1 keebler pre made chocolate graham cracker crust.
- 1 can lucky leaf lite cherry pie filling
- 2 8 oz. bricks of softened light cream cheese
- 1/2 cup splenda brand no calorie sweetener (or any other no calorie sweetener)
- 1 1/2 cups cool whip.
DIRECTIONS:
- Mix cream cheese and Splenda together until smooth using a hand mixer. (about 2-3 minutes on low to medium speed.)
- Fold in cool whip, and again mix until smooth.
- Pour mixture into pie crust.
- Pour can of cherry pie filling evenly over top of cheesecake.
- Refrigerate for at least 30 min. to let cheesecake thicken before serving.
- Garnish with a dollop of cool whip (if you choose) and serve!
You can also use non-fat cream cheese to make this even lower in calories, if you choose. I chose the light, because i find it does make for a more flavorful cheesecake, but if you don't mind the non-fat, go for it!
